
Gluten free and packed with delicious dried fruit and nuts, these oat bars are satisfying and will give you energy when you need a boost.
275g/10oz Hale & Hearty Pure Gluten Free Porridge Oats
75g/3oz raisins or sultanas
225g/8oz chopped dates
75g/3oz chopped Brazil nuts
50g/2oz chopped pecan nuts
25g/1oz pumpkin seeds
1tsp ground cinnamon
25g/1oz cornflour
125g/4oz sunflower oil
175g/6oz honey
50g/2oz low GI sugar (Fruisana, Agave, Sweet Freedom)
Preheat oven to 180C/gas mark 5.
Put the chopped and pitted dates, honey and oil in a pan with 100ml of water and bring to the boil on the hob. Reduce to a simmer for 5 minutes or until the dates appear soft.
Place all the remaining ingredients in a bowl, pour in the date mixture and stir until combined. Spoon into a lightly greased tin (22cm x 30cm).
Bake for 18 - 20 minutes until golden, remove from oven, leave out to cool for 5 minutes. Use a sharp knife to cut into individual bars and leave on a rack to cool.
