Feta Cheese Falafel with Minted Tomato Relish

Ingredients

For the falafel

200g pack Hale & Hearty Quick & Easy Falafel Mix

15ml (1tbsp) freshly chopped flat-leaf parsley

15ml (1tbsp) freshly chopped coriander

125g feta cheese, crumbled

Oil for frying

For the minty tomato relish

400g vine ripened tomoatoes, chopped

30ml (2tbsp) freshly chopped mint leaves

2.5ml (1/2 tsp) ground paprika

30ml (2tbsp) olive oil

Cooking instructions

  • Place the falafel mixture in a bowl and pour over 300ml boiling water, leave to rest for 15 minutes, then stir in the herbs and feta.

  • Preheat the oven to 190 C, 375F, gas mark 5. Mix together all the ingredients for the relish, season to taste and leave to one side.

  • Using slightly damp hands shape the falafel mixture inito 14 balls. Heat the oil in a large frying pan and cook the falafel over a medium heat for 2-3 minutes each side, until golden. Place on a baking tray and cook for 7-8 minutes.

  • Serve with the tomoto relish and toasted pitta bread
