
For a fluffy and delicious tea cake you will need:

50g brown rice flour; 50g maize flour, 100g polenta flour 2 eggs
120g soft light brown sugar 75g melted butter
50g cranberrries, 50g raisins, 50g blackcurrents 200ml milk
1 tablespoon of gluten free baking powder
10g of xantham gum
Mix, make & enjoy!
Combine the beaten eggs, milk and melted butter in a bowl and then stir this into the dry ingredients, beating well until blended.
Pour into a lightly greased baking pan or loaf tin and place in a preheated oven (180C / 350F) for 40 minutes until risen and golden.
Remove from the baking tin and allow cake to cool on a rack.
