Traditionally, cornstarch is used in gluten free products to bulk and thicken them and to lighten baking products - white cornstarch is a refined product made from corn. However, at Hale & Hearty we use mostly unrefined yellow cornmeal, unrefined cornflour and polenta. all of which have a deliciously crunchy and wholesome texture.
